Prinz Michael follows this mission since 1989 in his winery Schloss Wallhausen. He began growing grapes organically in 1989 in order to carry on an old tradition at the wineestate of growing wines as natural as possible. This was one step further.

Schloss Wallhausen is fully certified as an organic estate since 1995.

The vineyards have green in them all year around. Lupine, clover and canola is planted to increase azote in the ground, by this the natural nitrogen levels are kept up. It also helps to combate wind and water erosion in Schloss Wallhausen steep slopes. Other fertilisers are only given as a organic fertiliser. In this enviroment both benefical as well as vermins have their space to life in.
This planting off the vineyards gives the vines a better healthyness, which carry through into a higher quality as well as a higher enjoyment level. Yields are naturally lower, which increases quality. Grapes are picked by hand and treated as genlty as possible. Most of the wines are still fermented in old wooden cask. Others are fermented in stainless steal.
The speciallity of Schloss Wallhausen is off dry Rieslings were sweetness is balanced by acidity. The wines with natural residual sugar are among the best at the winery.
